Easy Bacon-Wrapped Christmas Meatloaf

Ingredients: For the meatloaf
- Minced beef – 500g
- Eggs – 1
- Salt to taste
- Ground black pepper to taste
- Garlic powder – ½ tsp
- Italian seasoning – 1 tsp
- Chopped fresh parsley – ½ tsp
- Worcestershire sauce – 1 tbsp
- Tomato ketchup – 1 ½ tbsp
- Breadcrumbs – 25g
- Fresh milk – 90ml
- Chopped big onion – ½
- Bacon strips – 8-10
Ingredients: For the glaze
- Tomato ketchup – 60ml
- Brown sugar – 2 tbsp
- White vinegar – 1 tsp
- Salt to taste
- Black pepper to taste
Instructions
- In a large mixing bowl, combine the minced beef, egg, salt, pepper, garlic powder, Italian seasoning, chopped parsley, Worcestershire sauce, ketchup, breadcrumbs, milk, and chopped onion. Mix thoroughly until all ingredients are well incorporated.
- Form the mixture into a neat loaf shape and place it onto a baking tray lined with parchment paper or lightly greased.
- In a separate small bowl, whisk together the tomato ketchup, brown sugar, white vinegar, salt, and pepper until smooth.
- Using a pastry brush, spread a layer of the glaze evenly over the meatloaf. Arrange the bacon strips over the top, tucking them slightly underneath to fully cover the loaf. Brush the top of the bacon with another layer of the glaze.
- Place in a preheated oven at 180°C. Bake for 45 minutes.
- Remove from the oven and brush with the remaining glaze. Return to the oven for another 20-25 minutes until the bacon is crispy and the meatloaf is fully cooked.
- Allow the meatloaf to rest for 15 minutes before slicing. This ensures the juices settle, making it easy to slice and incredibly tender for your guests.
