Easy & Delicious Homemade Zebra Cake Recipe

There is something truly magical about slicing into a freshly baked cake and revealing a beautiful, striking pattern inside. This homemade zebra cake is one of my absolute favorite treats to bake when I want to impress my family and friends without spending hours in the kitchen. It brings together the best of both worlds, rich chocolate and classic vanilla, in a deliciously moist marble cake.

Whether you are baking for a weekend treat, a birthday, or just need the perfect companion for your afternoon tea, this easy zebra cake recipe delivers every single time. The mesmerizing black-and-white stripes look like a bakery masterpiece, but as you will see, it is surprisingly simple to create right at home!

Ingredients:

  • All-purpose flour: 250g
  • Baking powder: 2 tsps
  • Unsalted Butter / Margarine: 250g
  • Sugar: 250g
  • Eggs: 4
  • Vanilla extract: 1 tsp
  • Milk: ½ cup (divided into two ¼ cup portions)
  • Cocoa powder: 25g
  • Salt: A pinch

Step-by-Step Method:

  • In a medium bowl, combine the all-purpose flour, baking powder, and a pinch of salt. Set this aside.
  • In a large mixing bowl, beat the margarine (or unsalted butter) and sugar together until the batter becomes super soft, pale, and creamy.
  • Once the butter and sugar are well mixed, add the eggs one by one, beating well after each addition to ensure a smooth texture.
  • Stir the vanilla extract into the batter.
  • Gradually add your dry flour mixture to the wet ingredients while beating. Do not add all the flour at once; adding it in batches makes it much easier to mix well and prevents clumps.
  • While beating the batter, pour in ¼ cup of the milk to loosen the mixture.
  • In a separate small bowl, whisk together the cocoa powder, 1 tablespoon of sugar, and the remaining ¼ cup of milk until smooth.
  • Take exactly half of your white vanilla batter and gently fold it into the cocoa mixture until you have a rich, uniform chocolate batter.
  • This is where the magic happens! Begin in the exact middle of your greased baking pan. 8” x 8” round tray) Drop one tablespoon of the white batter directly into the center. Then, drop a tablespoon of the chocolate batter directly on top of the center of the white batter. Repeat this alternating process until all of your batter is finished. The batter will naturally spread outward to create the zebra stripes.
  • Place the pan in a pre-heated oven and bake for 40 to 45 minutes at 180°C.
  • Once the baking time is up, insert a toothpick into the middle of the cake. If it comes out clean, your cake is ready. If not, bake it for a few more minutes and test again.
  • Remove the beautiful zebra cake from the oven and let it cool in the pan for about 15 minutes before turning it out.
  • Letting the cake cool for the full 15 minutes ensures your beautiful stripes set perfectly and makes slicing an absolute breeze.
